Slow Cooker Zesty Pork Stew (or other meat) + Steven Wright

Ingredients
2 lbs. boneless pork shoulder blade roast OR 2 lbs. of stewing meat of your choice
1 tbsp. vegetable oil OR 1 tbsp. olive oil (esp. for red meat)
2 chopped onions
2 sweet potatoes (peeled & cubed)
2 stalks of sliced celery
3 cups of gluten-free chicken stock (for pork or white meat) OR 2 cups of gluten-free beef / vegetable stock + 1 cup of red wine (for red meat)
2 tsp. dried thyme (gluten-free) & if using red meat add 1 tsp. of parsley too (if desired)
1 tsp. grated lemon rind (for pork or white meat) OR 2 tbsp. gluten-free tomato paste for red meat
1 tbsp. lemon juice (for pork or white meat only)

3/4 tsp. salt
1/4 cup all-purpose gluten-free flour (I prefer Bob's Red Mill)
1 can (14 oz) artichoke hearts (rinsed & drained) - packed in water has less calories
2 cups frozen green beans OR I prefer frozen broccoli florets (greater nutrient value)

I wish I had tons of money and could buy books as often as I want, but since it's not the case, I have to be careful in my choice of books.
I do go to the public library, but unfortunately they do not have
those books on my wish list yet.
If I ever win a big amount of money, I sure would buy enormous quantities of books for public libraries.

Some of the books that I really, really would like to read are:

I just found this delicious recipe on the web this morning. What a great way to use fresh veggies from your farmer's market or from your own garden. Farmer's Market Egg Bake

Farmer's Market Egg Bake

1/2 medium zucchini, peeled & diced
1/2 medium summer squash, peeled & diced
1/2 medium red onion, diced
1 red bell pepper, diced
4-5 mushrooms (any kind'll do), diced
1 cup shredded cheese (I like Monterrey jack the best)
8 eggs
1/3 cup milk
7-8 dashes Tabasco (or to taste)
1/2 teaspoon garlic powder
1 teaspoon pepper (less if your not so fond of pepper)
1/2 teaspoon Kosher salt

1 - Spray 9x9 casserole dish with olive oil spray (or any cooking spray) and preheat oven to 425 degrees F
2 - Layer veggies onto the bottom of the prepared dish
3 - Top veggies with shredded cheese
4 - Whisk eggs & milk together until well combined
5 - Add garlic powder, salt, pepper & Tabasco to egg mixture and mix well
6 - Pour egg mixture over veggies and cheese
7 - Using a fork, stir gently to ensure egg mixture covers the veggies and soaks down to the bottom of the dish
8 - Using the back of the fork, press down the veggies and cheese to submerge as much as possible
9 - Bake in preheated oven for 40-45 minutes or until the eggs puff up and a toothpick inserted into the center comes out clean

Delicious Soup Recipes For A Cold Night

Loaded "Baked Potato" Soup

What You Need

2 baking potatoes (1 lb./450 g)
1 can (10 fl oz/284 mL) 25%-less-sodium chicken broth
1 cup skim milk
3 slices fully cooked bacon, chopped, divided
3/4 cup Kraft Double Cheddar Shredded Cheese, divided
1 green onions, sliced, divided
1/4 cup light sour cream
Make It

PIERCE potatoes. Microwave on HIGH 5 min., turning over after 2-1/2 min. Mix broth and milk in large microwaveable bowl. Add potatoes. Microwave on HIGH 6 min., stirring after 3 min. Mash potatoes lightly.

RESERVE 2 Tbsp. each of the bacon and cheese, and 1 Tbsp. of the onions; stir remaining into soup.

SERVE topped with reserved ingredients and sour cream.

When President Franklin D. Roosevelt created the Works Progress Administration, he
also saw that women get some work, not just the men.

The administration came up with the plan to deliver books to rural areas in Kentucky
to isolated and poor people.
Women were riding horses and carrying the books to the people.
It wasn't an easy job and you had to be a strong woman to keep up.

They were called "Horse Pack Librarians".

Unfortunately, it was dismantled after a few years.

THE HANDWRITING ON THE WALL

A weary mother returned from the store,
Lugging groceries through the kitchen door.
Awaiting her arrival was her 8 year old son,
Anxious to relate what his younger brother had done.

"While I was out playing and Dad was on a call,
T.J. took his crayons and wrote on the wall!
It's on the new paper you just hung in the den.
I told him you'd be mad at having to do it again."

She let out a moan and furrowed her brow,
"Where is your little brother right now?"
She emptied her arms and with a purposeful stride,
She marched to his closet where he had gone to hide.

She called his full name as she entered his room.
He trembled with fear--he knew that meant doom!
For the next ten minutes, she ranted and raved
About the expensive wallpaper and how she had saved.

Lamenting all the work it would take to repair,
She condemned his actions and total lack of care.
The more she scolded, the madder she got,
Then stomped from his room, totally distraught!

She headed for the den to confirm her fears.
When she saw the wall, her eyes flooded with tears.
The message she read pierced her soul with a dart.
It said, "I love Mommy," surrounded by a heart.

Well, the wallpaper remained, just as she found it,
With an empty picture frame hung to surround it.
A reminder to her, and indeed to all,
Take time to read the handwriting on the wall.

A little while ago, I read a book titled "On That Day Everybody Ate",by Margaret Trost.

"Margaret is a young american woman who was in her 30s when her husband died suddenly of asthma, leaving her to raise their young son alone. In despair, seeking meaning in her life and in her husband’s death, she accepted an invitation to visit Haiti as part of a pilgrimage of reverse mission, to serve the poor as a means to transform the providers. This is a moving account of her immersion in the West's most impoverished nation. Gently and viscerally, Trost describes her experiences in a hospice and in the horrific slums of Cité Soleil. As she struggles to make sense of such extreme conditions existing so near the US, readers discover with her the healing power of reaching out. In the process, we meet and come to love the eternally optimistic and enterprising Father Jean-Just, and the wise octogenarian Manmi Dét, who teaches Margaret to work hard and also to play and to dance. And we have a front-row seat as this unlikely group of friends creates a food program for Haiti's children. In straightforward, conversational prose, with humility, candor, and love, Trost shares the story of a serendipitous flow of events that guided her on her passage from despair to hope."

After reading this book, I came to really feel the desperation in the Haitian people and resolved to raise money for the cause of "What If Foundation."
